This recipe does not have a strong quinoa flavor, unless you use all quinoa flour. One of the tastiest of the gluten-free muffins. Plus it is much more moist than most gluten-free muffins.
While I haven't tried this particular recipe (but ones very similar to it), anything that I've ever baked with quinoa flour we ended up chucking in the garbage because none of my family, including myself, liked the taste. However, this recipe looks like a very healthy one for those who like the taste of quinoa flour. (Our family likes the taste of whole grain cooked quinoa with tomatoes, cilantro, parsley, olive oil and lemon).
I made these muffins using brown rice flour and applesauce. Moist and Delcious!!! Thanks for the wonderful recipe.
