How to eat more vegetables?

How does a die-hard meat-eater like myself learn to love and actually eat more vegetables - something that is, to me, about as natural as poking myself in the eye with a dull stick!?

Incorporating Vegetables
I find it easy to incorporate vegetables in the diet by adding them directly to the meat dish.  The next time you make lasagne, try layering broiled eggplant slices instead of using noodles.  The same with spaghetti, use spaghetti squash instead of spaghetti noodles.  Stuff zucchini or peppers with a mixture of ground meats and brown rice, then roast them.  Try poa...
